Malacañang serves ‘seafood ala bicol express,’ lapu-lapu fillet for Chile president

Chilean President Michelle Bachelet will be treated to a number of local delicacies during the state luncheon in Malacañang on Monday, based on the menu shared to media.

Similar to previous state luncheons, local traditional dishes will be given a modern twist. There is “seafood ala Bicol Express vol au vent” and “cashew-crusted lapu-lapu fillet, escabeche sauce.”

Quezong puti will be served with local fruits while the dessert sampler is composed of purple yam biko roulade coated with coconut, mango-cashew chocolate gateaux, and macapuno-pandan mousse with fresh fruit pearls.

Bachelet is in the country for a state visit and to attend the Asia-Pacific Economic Cooperation (Apec) Summit later this week.

Before the state luncheon, Bachelet had a bilateral meeting with President Benigno Aquino III. The two of them also witnessed the signing of a letter of intent on joint study for free trade and agreement between Philippines and Chile and a memorandum of understanding (MOU) on disaster risk reduction and management (DRRM).

Among the performers invited for the state luncheon are Vina Morales, Cris Villonco, Noel Cabangon, Shiela Valderama, Aicelle Santos, Bo Cerrudo, and Lorenz Martinez. The groups Dance Royalties, Philippine Theater Luminaries and Sindaw Philippines Performing Arts Guild Homer Flores and Band, Philippine Pops Orchestra, and Nightingale Strings Manila will also perform.
